Ingredients

- 2 cups (200 g) chikanda powder (ground wild orchid tuber)
- 2 cups (200 g) roasted ground peanuts
- 6 cups (1.4 L) water, divided
- 1 medium onion, finely chopped (about 150 g)
- 2 tbsp (30 ml) vegetable oil
- 1–2 fresh red chilies, minced (adjust to taste)
- 2 tsp (10 g) salt, plus more to taste
- 1 tsp (5 g) baking soda
- 1 tsp (5 g) ground black pepper
- 1 tsp (4 g) smoked paprika or ground red pepper (optional, regional variation)
- Banana leaves or parchment, for lining (optional)
- 2 tbsp (30 ml) vegetable oil, for frying (optional, to serve)

Instructions

1. In a bowl, whisk 1 cup (240 ml) of the water into the chikanda powder and ground peanuts to form a smooth, fairly thick batter with no lumps.
2. Heat 2 tbsp (30 ml) vegetable oil in a large pot over medium heat; add the chopped onion and minced chilies and sauté until soft and translucent, about 5 minutes.
3. Add the remaining 5 cups (1.2 L) water to the pot and bring to a simmer. Stir in salt, black pepper, and smoked paprika if using.
4. Slowly pour the chikanda–peanut batter into the simmering liquid while stirring constantly to avoid lumps. Continue to cook, stirring, until the mixture thickens and pulls away from the sides of the pot, about 10–15 minutes.
5. Dissolve the baking soda in 1 tbsp (15 ml) warm water and stir it into the thickened mixture; cook 1–2 minutes more—the soda helps develop the characteristic set and texture.
6. Line a loaf pan or shallow tray with banana leaves or parchment. Pour the cooked mixture into the pan, press level, and smooth the top. Let cool to room temperature, then refrigerate until fully firm, at least 2–3 hours.
7. To serve traditionally, slice the set chikanda into 1/2-inch (1.2 cm) slabs. Optionally heat 2 tbsp (30 ml) oil in a skillet over medium-high heat and pan-fry slices until golden and slightly crisp on both sides. Serve warm or at room temperature.
