Ingredients
- 2 cups (240 g) fine maize meal (white or yellow)
- 8 cups (1920 ml) water, divided
- 1/4 cup (30 g) sorghum or millet flour (optional starter to encourage fermentation)
- 1/4 cup (60 g) plain unsweetened yogurt or 2 tbsp (16 g) fermented porridge starter (optional)
- 1/2 tsp (3 g) salt, or to taste
- 2–4 tbsp (30–60 g) sugar or honey, to taste (optional; traditional emahewu can be unsweetened)
Instructions
1. In a large pot, whisk 1 cup (240 ml) of the water with the maize meal until completely smooth and lump-free to form a thin slurry. Stir in the sorghum/millet flour and the yogurt or starter if using.
2. Heat the remaining 7 cups (1680 ml) of water in the pot until nearly boiling, then slowly pour the hot water into the maize slurry while stirring constantly to combine evenly.
3. Return the mixture to the pot and cook over medium heat, stirring frequently, until it thickens slightly and forms a soft porridge consistency, about 10–12 minutes. Remove from heat and let cool to lukewarm (about 100–110°F / 38–43°C).
4. Once lukewarm, stir in the salt and sugar or honey if using. Cover the pot with a clean cloth or lid and leave at room temperature to ferment for 24–48 hours; fermentation time depends on ambient temperature and desired sourness (longer for tangier flavor).
5. After fermentation, stir the emahewu well. For a drinkable consistency, thin with cold water to taste; for a thicker porridge-style entree, heat gently and serve warm. Refrigerate leftovers and consume within 3–4 days.
