Ingredients

- 3 cups (360 g) coarse rye flour
- 2 cups (240 g) all-purpose flour
- 1 1/4 to 1 1/2 cups (300–360 ml) lukewarm water
- 1 1/2 tsp (8 g) kosher salt, plus extra for curing fish
- 1 tbsp (15 ml) melted butter or lard (optional, for richer dough)
- 1 lb (450 g) perch or whitefish fillets, pin-boned and salted lightly (cure with 1 tsp salt, then rinse/dab dry) — approx. 1 lb (450 g) usable fish
- 8 oz (225 g) pork belly, cut into 1/2-inch strips, approx. 8 oz (225 g)
- 2 hard-boiled eggs, peeled and quartered (optional traditional addition)
- 2 tbsp (30 g) unsalted butter, cut into small pieces to tuck among the filling
- 1/2 tsp (1 g) freshly ground black pepper
- 1 tsp (2 g) caraway seeds (optional regional touch)

Instructions

1. Make the dough: in a large bowl combine 3 cups (360 g) rye flour, 2 cups (240 g) all-purpose flour and 1 1/2 tsp (8 g) salt. Stir in 1 1/4 cups (300 ml) lukewarm water and 1 tbsp (15 ml) melted butter (if using). Mix to a firm, slightly sticky dough, adding the remaining water a tablespoon at a time as needed. Knead briefly until cohesive; form into two oval loaves for easier handling (or one large loaf).
2. Prepare filling: pat the fish fillets dry after light salting and rinse/dab if you prefer less salty. Layer pieces of fish and pork belly alternating, seasoning lightly with black pepper and caraway seeds. Tuck the quartered hard-boiled eggs and small pieces of butter among the layers; the butter and pork will render and keep the fish moist.
3. Assemble: On a floured work surface, roll each dough portion into an oval large enough to enclose the filling. Place half the filling in the center of each oval, fold the dough over the filling and seal all edges tightly by pinching and pressing so the crust is continuous with no gaps. Place seam-side down on a parchment-lined baking sheet. Prick the top lightly or leave sealed.
4. Bake low and slow: preheat oven to 250°F (120°C). Place the kalakukko on the middle rack and bake for 3–4 hours (for a large single loaf, 4–5 hours may be needed) until the crust is dark, firm and the filling is fully cooked. If the crust browns too quickly, cover loosely with foil.
5. Rest and serve: remove from oven and let cool slowly; traditionally kalakukko is rested for several hours or overnight so the juices redistribute into the bread. Slice thickly and serve lukewarm or at room temperature; the rye crust is dense and the interior will be savory and compact.
