Ingredients

- 1 lb (454 g) conch meat, tenderized and finely chopped
- 1/2 cup (120 ml) buttermilk (for brief soak)
- 1 cup (125 g) all-purpose flour, plus 1/4 cup (30 g) extra for dredging
- 1 tsp (4 g) baking powder
- 1/2 tsp (2.5 g) salt
- 1/4 tsp (0.5 g) black pepper
- 1 large egg (approx. 50 g)
- 3/4 cup (180 ml) milk (or coconut milk for island flavor)
- 1/2 cup (75 g) finely diced red bell pepper
- 1/2 cup (80 g) finely diced yellow or white onion
- 1/4 cup (25 g) finely chopped scallions (green onions)
- 1 small Scotch bonnet or habanero pepper, seeded and finely diced (adjust to taste)
- 2 tbsp (8 g) chopped fresh parsley or cilantro
- 1 tsp (5 ml) Worcestershire sauce (optional)
- 1 tbsp (15 ml) lime juice
- Vegetable oil for deep frying, about 4 cups (960 ml)
- Lime or lemon wedges, for serving
- Optional dipping sauce: 1/2 cup (120 g) mayonnaise mixed with 2 tbsp (30 g) ketchup and 1 tsp (5 ml) hot sauce

Instructions

1. Tenderize the conch by pounding lightly with a meat mallet, then cut into small pieces and place in a bowl with the buttermilk; refrigerate 20–30 minutes. Drain and pat dry, then dredge in 1/4 cup (30 g) flour to remove excess moisture.
2. In a large bowl whisk together 1 cup (125 g) flour, baking powder, salt and pepper. In a separate bowl beat the egg with milk, Worcestershire sauce (if using), lime juice and chopped parsley.
3. Stir the wet ingredients into the dry ingredients until just combined. Fold in the chopped conch, bell pepper, onion, scallions and diced hot pepper. Batter should be thick enough to hold shape—if too thin, add a tablespoon of flour at a time.
4. Heat vegetable oil in a deep pot or heavy skillet to 350°F (175°C). Use a thermometer to maintain temperature for even frying.
5. Drop rounded tablespoonfuls of batter (or use a small ice cream scoop) into the hot oil, working in batches to avoid crowding. Fry 2–3 minutes per side, turning as needed, until deep golden brown and cooked through.
6. Remove fritters with a slotted spoon and drain on paper towels. Keep warm in a low oven while frying remaining batches.
7. Serve hot with lime or lemon wedges and the optional spicy mayo-ketchup dipping sauce.
