- 4 firm white fish fillets (sea bream, cod or haddock), approx. 6 oz (170 g) each - 1/3 cup (80 ml) extra-virgin olive oil - 3 tbsp (45 ml) fresh lemon juice - 1/2 cup (120 ml) dry white wine or fish stock - 2 cups (240 g) carrots, sliced - 1 large red onion, thinly sliced (approx. 8 oz / 225 g) - 8 oz (225 g) mushrooms, quartered - 3 cloves garlic, minced - 1 tbsp (15 g) tomato paste (optional for a slightly tangy base) - 1 tsp (5 g) dried oregano - 2 tbsp (8 g) fresh parsley, chopped - 1 tsp (5 g) kosher salt - 1/2 tsp (2.5 g) freshly ground black pepper - Lemon wedges, for serving
1. Preheat oven to 375°F (190°C). In a large bowl combine olive oil, lemon juice, white wine or stock, tomato paste (if using), garlic, oregano, salt and pepper. 2. Toss carrots, red onion and mushrooms with half the olive oil-lemon mixture and spread in an even layer in a shallow baking dish. 3. Arrange fish fillets on top of the vegetables and spoon remaining sauce over each fillet. Scatter parsley on top. 4. Cover the dish tightly with foil and bake for 20 minutes. Remove foil and bake an additional 8–10 minutes until fish flakes and vegetables are tender and edges are lightly browned. 5. Serve hot with lemon wedges and extra parsley.
