Ingredients

- 2 lb (900 g) pork shoulder, cut into 1-inch (2.5 cm) cubes
- 1/2 cup (120 ml) soy sauce
- 1/2 cup (120 ml) white vinegar
- 1/2 cup (120 ml) water
- 8 garlic cloves, crushed
- 2 bay leaves
- 1 tsp (5 g) whole black peppercorns
- 2 tbsp (30 ml) vegetable oil
- 1 tbsp (12 g) brown sugar (optional)
- 1 medium onion, sliced (optional)
- Cooked white rice for serving

Instructions

1. Combine pork, soy sauce, vinegar, water, crushed garlic, bay leaves, and peppercorns in a bowl and marinate at least 30 minutes or up to 2 hours.
2. Heat oil in a deep skillet or Dutch oven over medium heat; if using, sauté onion until translucent, then add marinated pork (reserve marinade) and sear cubes until lightly browned.
3. Pour in reserved marinade and water as needed to barely cover the pork; bring to a boil, reduce heat to low, cover, and simmer until pork is tender, about 45–60 minutes.
4. Remove lid and simmer uncovered until sauce reduces and coats the pork, stirring occasionally; taste and add brown sugar if you prefer a touch of sweetness; serve hot over steamed rice.
