- 5 cups (700 g) sliced nectarines (about 6–7 medium) - 1 cup (150 g) sliced red kiwis (about 4–5 fruit) - 1/2 cup (100 g) granulated sugar - 2 tbsp (30 ml) fresh lemon juice - 2 tbsp (16 g) cornstarch - 1/2 tsp (2.5 ml) ground cinnamon - 1 1/2 cups (135 g) old-fashioned rolled oats - 3/4 cup (95 g) all-purpose flour - 1/2 cup (100 g) packed brown sugar - 1/2 cup (1 stick, 113 g) unsalted butter, cold and cubed - 1/4 tsp (1.25 ml) fine salt
1. Preheat oven to 375°F (190°C). Lightly grease a 9x9-inch (23x23 cm) baking dish. 2. In a large bowl, combine the sliced nectarines, sliced red kiwis, granulated sugar, lemon juice, cornstarch, and cinnamon; toss until fruit is evenly coated. Transfer mixture to the prepared dish. 3. In a second bowl, mix the oats, flour, brown sugar, and salt. Cut in the cold cubed butter with a pastry cutter or fingertips until mixture resembles coarse crumbs. 4. Sprinkle the oat streusel evenly over the fruit layer. 5. Bake for 30–40 minutes, until topping is golden brown and fruit is bubbling at the edges. 6. Let cool slightly before serving. Serve warm with vanilla ice cream or whipped cream if desired.
