- 1 tsp (2 g) lime zest (from 1 lime)
- 1 large egg white, approx. 1 oz (30 g) (optional; for silkier texture—use pasteurized if preferred)
- Pinch (1/8 tsp / 0.5 g) fine salt
- 1 tbsp (15 ml) light neutral spirit (vodka) or 1 tbsp (15 ml) simple syrup (optional; helps scoopability)

Instructions

1. Make ginger syrup: In a small saucepan combine sugar, water, and the sliced ginger. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Simmer 3–5 minutes to infuse, then remove from heat and cool to room temperature, covered, about 30 minutes.
2. Strain the syrup into a bowl, pressing on the ginger to extract flavor; discard solids. Stir in lime juice, lime zest, and salt. If using the spirit or extra simple syrup, stir it in now.
3. Chill the mixture thoroughly in the refrigerator until very cold, at least 2 hours or preferably overnight.
4. If using the egg white for texture: lightly whisk the egg white until frothy. Temper it by whisking in 2–3 tbsp (30–45 ml) of the chilled sorbet base, then whisk the tempered mixture back into the remaining sorbet base. (Use pasteurized egg white if concerned about raw eggs.)
5. Churn: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft‑serve sorbet consistency, usually 20–30 minutes.
6. Firm up: Transfer the sorbet to a shallow airtight container, press a piece of parchment directly on the surface to prevent ice crystals, and freeze until firm, about 2–4 hours.
7. No‑machine method: Pour the chilled base into a shallow metal or glass pan and freeze for 45 minutes. Scrape with a fork to break up ice crystals, return to freezer, and repeat scraping every 30–45 minutes for 3–4 cycles until velvety and scoopable.
8. Serve: Let sorbet sit at room temperature 3–5 minutes to soften slightly before scooping. Garnish with a thin lime wheel or a fine grating of fresh ginger if desired. Store in the freezer up to 1 week for best texture.
