Ingredients
- 3 lb (1.4 kg) pork spare ribs, cut into serving pieces
- 1/2 cup (120 ml) soy sauce
- 1/4 cup (60 ml) brown sugar
- 1/4 cup (60 ml) mirin or rice wine
- 1/4 cup (60 ml) water
- 1/2 cup (120 g) grated Asian pear (or Bosc pear)
- 4 cloves garlic, minced
- 2 tbsp (30 ml) grated ginger
- 2 tbsp (30 ml) sesame oil
- 2 tbsp (30 ml) toasted sesame seeds
- 1/4 cup (60 ml) finely chopped scallions
- 1 tsp (5 ml) black pepper
- 1 tbsp (15 ml) vegetable oil (for grilling or broiling)
Instructions
1. In a bowl combine soy sauce, brown sugar, mirin, water, grated pear, garlic, ginger, sesame oil, sesame seeds, scallions, and black pepper to make the marinade. Add ribs and massage to coat. Marinate 8 hours or overnight in the refrigerator.
2. Remove ribs from marinade and pat lightly dry. Reserve marinade and bring to a boil in a small saucepan for 3–4 minutes, then cool (use as basting sauce).
3. Preheat grill to medium-high or set oven broiler to high. Brush ribs lightly with oil and grill or broil 8–12 minutes per side, basting occasionally with reserved boiled marinade, until ribs are cooked through and caramelized at edges.
4. Let rest 5 minutes, sprinkle with additional toasted sesame seeds and sliced scallions, and serve.
