Ingredients

- 2 lb (900 g) mussels, scrubbed and debearded
- 1 tbsp (15 ml) extra-virgin olive oil
- 2 tbsp (30 g) unsalted butter
- 1 small shallot, finely chopped
- 3 cloves garlic, minced
- Zest of 1 lemon
- 2 tbsp (30 ml) lemon juice
- 1/2 cup (120 ml) dry white wine
- 1/4 cup (60 ml) low-sodium chicken broth or vegetable broth
- 1/4 cup (15 g) chopped fresh parsley
- 1/4 tsp (0.5 g) red pepper flakes (optional)
- Kosher salt and freshly ground black pepper, to taste
- 4 slices (about 4 oz / 115 g) crusty bread, for serving

Instructions

1. Rinse mussels under cold water, discard any with broken shells, and remove beards by pulling toward the hinge; set aside in the refrigerator while preparing the broth.
2. In a wide deep skillet or large shallow pot with a tight-fitting lid, heat the olive oil and butter over medium heat until the butter melts and foams. Add the shallot and sauté until softened and translucent, about 3–4 minutes.
3. Add the garlic and red pepper flakes (if using) and cook, stirring, until fragrant, about 30 seconds. Stir in the lemon zest.
4. Pour in the white wine and increase heat to medium-high; simmer for 1–2 minutes to reduce slightly, scraping up any browned bits. Add the broth and lemon juice and bring the liquid to a brisk simmer.
5. Add the mussels to the pot, cover, and steam until the shells open, about 4–6 minutes. Gently shake the pan once or twice during cooking to redistribute the mussels. Do not overcook.
6. Remove the lid and discard any mussels that did not open. Taste the cooking broth and season with salt and pepper as needed. Stir in the chopped parsley and gently toss the mussels to coat in the lemon‑garlic broth.
7. Spoon mussels and broth into warmed bowls, drizzle any remaining pan juices over top, and serve immediately with crusty bread for dipping.
