- 2 salmon fillets, approx. 6 oz (170 g) each - 2 tbsp (30 ml) olive oil - 1 tbsp (15 ml) fresh lemon juice - 1 tsp (2 g) freshly ground black pepper - 2 tbsp (8 g) chopped fresh dill - 2 cloves garlic, minced - 2 lemon slices per fillet (for grilling and serving) - 1 tbsp (14 g) unsalted butter (optional, for finishing)
1. Pat salmon dry. In a small bowl combine olive oil, lemon juice, minced garlic, black pepper, and chopped dill; brush over both sides of the fillets. Let rest 10 minutes. 2. Preheat grill or grill pan to medium-high. Oil the grate or pan lightly. Grill salmon skin-side down 4–6 minutes, flip and grill 2–4 minutes more until opaque and flake easily. 3. Remove from grill, top each fillet with a lemon slice and a small pat of unsalted butter if using, and let rest 2 minutes before serving with extra dill and lemon wedges.
