Ingredients
2 salmon fillets, about 12 oz total (340 g total)
1 cup (150 g) cherry tomatoes, halved
2 cups (60 g) fresh spinach leaves
2 tbsp (30 ml) olive oil
Salt and pepper to taste
1 tsp (5 ml) lemon juice (optional)
Instructions
1. **Preheat the Oven**: Preheat your oven to 400°F (200°C).
2. **Prepare the Vegetables**: In a skillet over medium heat, add 1 tablespoon of olive oil. Add the cherry tomatoes and sauté them until they start to soften, about 3-4 minutes. Add the spinach and cook until it wilts. Season with salt and pepper to taste, then remove from heat and set aside.
3. **Prepare the Salmon**: Lightly grease a baking dish with a little olive oil. Place the salmon fillets in the dish and drizzle with the remaining olive oil. Season with salt and pepper. If using, add a splash of lemon juice over the top of the fillets.
