Ingredients

1 lb / 450 g alligator sausage, sliced
1 / 2 lb / 225 g shrimp, peeled and deveined
1 / 4 cup (60 ml) vegetable oil
1 / 4 cup (30 g) all-purpose flour
1 onion, diced
1 bell pepper, diced
2 stalks celery, diced
3 cloves garlic, minced
1 can (14.5 oz / 410 g) diced tomatoes
3 cups (720 ml) chicken broth
2 tsp Cajun seasoning
1 bay leaf
1 cup (100 g) sliced okra
1 tbsp (15 ml) Worcestershire sauce
Salt and pepper to taste
Cooked white rice, for serving
Chopped green onions, for garnish

Instructions

1. In a large pot, heat the vegetable oil over medium heat. Whisk in the flour and cook, stirring constantly, until the roux turns a deep brown color.
2. Add the onion, bell pepper, and celery to the roux, and sauté until the vegetables are soft. Stir in the garlic and cook for another minute.
3. Add the sliced alligator sausage and cook for 5 minutes, until the sausage begins to brown.
4. Stir in the diced tomatoes, chicken broth, Cajun seasoning, bay leaf, and okra. Bring to a simmer and cook for about 15 minutes.
5. Add the shrimp and Worcestershire sauce. Simmer for an additional 10 minutes, or until the shrimp are cooked through. Season with salt and pepper to taste.
6. Serve hot over cooked white rice and garnish with chopped green onions.
