Ingredients
1 lb (450 g) green beans, trimmed
2 tbsp (30 ml) olive oil
2 medium shallots, finely chopped
2 cloves garlic, minced
Salt and black pepper to taste
1 tbsp (15 ml) fresh lemon juice (optional)
1 tbsp chopped fresh parsley (optional)
Instructions
1. Bring a pot of salted water to boil. Add the green beans and cook until just tender but still crisp, about 3-4 minutes. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the chopped shallots and sauté until soft and translucent, about 2-3 minutes. Add the minced garlic and sauté for an additional 1 minute.
3. Add the cooked green beans to the skillet, tossing to combine with the shallots and garlic. Cook for another 2-3 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
4. Remove from heat. Optionally, drizzle with lemon juice and sprinkle with parsley before serving for added freshness. Serve immediately.
