- 1 lb (454 g) ground beef, formed into 4 patties, approx. 4 oz (113 g) each - 4 hamburger buns, approx. 3.5 oz (100 g) each - 4 slices American cheese, approx. 0.6 oz (17 g) each - 2 tbsp (30 ml) unsalted butter, softened - 1 tsp (5 g) kosher salt - 1/2 tsp (1.5 g) freshly ground black pepper - 1 tbsp (15 ml) vegetable oil - 4 tsp (20 g) yellow mustard - 4 tsp (20 g) ketchup - 1 small onion, approx. 4 oz (115 g), thinly sliced - 8 dill pickle slices, approx. 1.5 oz (45 g) total - 4 leaves iceberg lettuce (optional)
1. Preheat a skillet or griddle over medium-high heat and lightly oil. Season patties with salt and pepper and cook 2–3 minutes per side until crusted; place a slice of American cheese on each patty in the last 30–60 seconds and cover briefly to melt. 2. While cheese melts, butter and toast buns on the griddle. Build burgers by spreading mustard and ketchup on buns, placing the cheesed patty on the bottom bun, topping with onion, pickles, and lettuce if desired, then cap with the top bun and serve hot.
