- 4 beef patties, approx. 6 oz (170 g) each (1.5 lb / 680 g total ground beef) - 8 slices pastrami, approx. 8 oz (225 g) total - 4 burger buns - 4 slices provolone or American cheese, approx. 4 oz (115 g) total - 1/3 cup (80 ml) mayonnaise - 2 tbsp (30 ml) prepared horseradish - 1 tsp (5 ml) Dijon mustard - 1 large yellow onion, thinly sliced (about 1 cup / 150 g) - 2 tbsp (30 ml) vegetable oil - 1 tbsp (15 g) unsalted butter - 1 tsp (5 g) kosher salt, divided - 1/2 tsp (2 g) black pepper
1. Combine mayonnaise, prepared horseradish, and Dijon mustard; refrigerate to let flavors meld. 2. Heat 1 tbsp (15 ml) vegetable oil and 1 tbsp (15 g) butter in a skillet over medium heat. Add sliced onion and 1/2 tsp (2.5 g) salt; cook, stirring occasionally, until caramelized, about 12–15 minutes. Remove and keep warm. 3. Season beef patties with remaining 1/2 tsp (2.5 g) salt and pepper. Heat a clean skillet or grill over medium-high with 1 tbsp (15 ml) oil and cook patties 4–5 minutes per side for medium, adding cheese in the final minute to melt. 4. Warm pastrami in a skillet 1–2 minutes per side until heated through. 5. Toast buns briefly on the grill or skillet. 6. Spread horseradish mayo on both bun halves, place the cheeseburger patty, top with 2 slices warmed pastrami and a spoonful of caramelized onions, add the top bun, and serve.
