1. Divide ground beef into eight 2 oz (57 g) portions; flatten pairs into thin disks, place one piece of cheddar in the center of one disk, top with the matching disk and seal edges tightly to encase the cheese. 2. Season sealed patties lightly with salt and pepper. 3. Heat a skillet over medium-high heat with vegetable oil and cook patties 4–5 minutes per side, pressing gently once, until crusted and internal temperature reaches at least 160°F (71°C) and cheese is molten. 4. Toast buns in the skillet if desired, then place each hot sealed patty on a bun to allow any escaped cheese to stay warm; serve immediately with desired condiments.
