- 2 beef sirloin steaks, approx. 1 lb (450 g) each - 1/2 cup (120 ml) orange juice - 1/4 cup (60 ml) fresh lime juice - 1/4 cup (60 ml) olive oil - 2 tbsp (30 ml) soy sauce - 4 cloves garlic, minced (approx. 12 g) - 1/2 cup (15 g) chopped fresh cilantro - 1 jalapeño, seeded and minced (optional) - 1 tsp (5 g) ground cumin - 1 tsp (5 g) dried oregano - 1 1/2 tsp (7 g) kosher salt - 1/2 tsp (1.5 g) freshly ground black pepper - Optional to serve: warm corn tortillas, chopped white onion, extra cilantro, lime wedges
1. Whisk together orange juice, lime juice, olive oil, soy sauce, garlic, cilantro, jalapeño, cumin, oregano, salt and pepper; place steaks in a ziptop bag or shallow dish, pour marinade over and refrigerate at least 2 hours or overnight for best flavor. 2. Preheat grill to high, remove steaks from marinade and pat dry, grill 4–6 minutes per side for medium‑rare (time varies by thickness), let rest 5–10 minutes, slice thinly across the grain and serve with warm tortillas, onion, cilantro and lime.
