Ingredients
- 4 halibut fillets, approx. 6 oz (170 g) each
- 1 cedar plank (large enough to hold fillets), soaked in water at least 1 hour
- 2 tbsp (30 ml) olive oil
- 2 tbsp (30 g) unsalted butter, melted
- 1 lemon, thinly sliced
- 2 tbsp (8 g) fresh dill or parsley, chopped
- 1 tsp (5 g) kosher salt
- 1/2 tsp (2 g) freshly ground black pepper
- Optional: grilled seasonal vegetables to serve
Instructions
1. Soak cedar plank in water at least 1 hour (weight it down so it stays submerged); preheat grill to medium-high (about 400°F /200°C).
2. Brush fillets with olive oil, season with salt and pepper; brush melted butter over the plank and place lemon slices on the plank.
3. Arrange halibut on plank over lemons, brush fish with remaining butter and sprinkle with dill or parsley.
4. Place plank on preheated grill, cover and cook 12–18 minutes until fish is opaque and a thermometer reads 135–140°F (57–60°C); plank will char at edges — remove carefully.
5. Serve directly from the plank with grilled vegetables or a simple green salad.
