Ingredients
- 1 lb (454 g) ground beef
- 4 bell peppers, chopped (approx. 2 lb (900 g) total)
- 1 cup (185 g) uncooked rice
- 1 1/2 cups (360 ml) tomato sauce
- 1 medium onion (6 oz (170 g))
Instructions
1. Cook rice according to package directions; set aside.
2. Preheat oven to 350°F (175°C). In a skillet, cook ground beef and diced onion over medium heat until beef is no longer pink and onion is softened.
3. Stir chopped bell peppers and tomato sauce into the beef mixture and cook briefly until peppers begin to soften, about 5 minutes.
4. Combine the beef mixture with cooked rice and transfer to a baking dish, spreading into an even layer.
5. Cover and bake 20–25 minutes until heated through and bell peppers are tender. Let rest a few minutes before serving.
