- 12 whole chicken wings, approx. 3.5 oz (100 g) each; approx. 2 lb 10 oz (1.2 kg) total - 2 tsp (8 g) ground turmeric or 2 inches (5 g) fresh turmeric, grated - 6 cloves garlic - 4 shallots - 1 tsp (5 g) ground coriander - 1 tsp (5 g) salt - 1/2 tsp (2.5 g) white pepper - 1 cup (240 ml) coconut milk - 2 tbsp (30 ml) tamarind water or 1 tbsp (15 ml) lime juice - 1 cup (240 ml) vegetable oil for frying
1. Grind or blend turmeric, garlic, shallots, coriander, salt, and white pepper to a paste; mix paste with coconut milk and tamarind water, marinate wings at least 1 hour, then simmer wings in the marinade gently until partially reduced and wings absorb the flavors, about 15–20 minutes; drain and let cool slightly. 2. Deep-fry wings in 1 cup (240 ml) hot oil until deeply golden and crisp, about 6–8 minutes; drain and serve immediately with steamed rice or sambal on the side.
