Ingredients
4 cups (about 280 g) green cabbage, thinly shredded
1 cup (about 70 g) red cabbage, thinly shredded (optional)
1 large carrot, grated
2 scallions, thinly sliced
1 / 3 cup (about 10 g) fresh cilantro, chopped
1 jalapeño, thinly sliced (optional)
3 tbsp (45 ml) fresh lime juice
1 tbsp (15 ml) apple cider vinegar
1 tsp honey or sugar
1 tsp Dijon mustard (optional)
1 / 2 tsp ground cumin
1 / 2 tsp smoked paprika
3 / 4 tsp kosher salt, to taste
1 / 4 tsp black pepper
2 tbsp (30 ml) olive oil or neutral oil
Instructions
In a large bowl, combine the cabbages, carrot, scallions, cilantro, and jalapeño (if using).
In a small bowl, whisk together lime juice, vinegar, honey, Dijon, cumin, smoked paprika, salt, pepper, and oil until emulsified.
Pour the dressing over the vegetables and toss thoroughly to coat.
Let the slaw rest 10–15 minutes to slightly wilt and absorb flavors, tossing once or twice.
Taste and adjust seasoning with more lime or salt as needed. Serve chilled or at cool room temperature alongside chili cheese fries for a bright, crunchy contrast.
