1. Preheat oven to 375°F (190°C). Rinse the jasmine rice and place in a deep ovenproof dish sized to hold rice and chicken; add rice to cover the base in an even layer. 2. Scatter the sliced mushrooms evenly over the rice. Arrange the chicken breasts on top of the mushroom-and-rice layer. 3. Cover the dish tightly with foil and bake for 35–40 minutes, until the rice is tender and the chicken reaches 165°F (74°C). 4. Remove foil, sprinkle cheddar cheese over the chicken and rice, and return to the oven uncovered for 5–8 minutes until the cheese is melted and lightly browned. 5. If using, briefly steam the broccoli until tender and serve alongside or atop the baked chicken and rice.
