Ingredients

- 1 cup (200 g) granulated sugar  
- 1 cup (240 ml) water  
- 2 tbsp (30 ml) light corn syrup (optional; helps texture)  
- 1/2 cup (120 ml) fresh lemon juice (about 3–4 lemons)  
- Zest of 2 lemons (approx. 2 tsp / 4 g)  
- 3 tbsp (45 ml) fresh bergamot juice (about 2–3 bergamots)  
- Zest of 2 bergamots (approx. 2 tsp / 4 g)  
- 1 tbsp (15 ml) Cointreau or limoncello (optional)  
- Pinch salt (1/8 tsp / 0.5 g)  
- OR if fresh bergamot unavailable: 1/4 tsp (1.2 ml) food-grade bergamot essential oil (use sparingly, instead of bergamot juice and zest)

Instructions

1. In a small saucepan combine the sugar, water, and corn syrup (if using). Heat over medium, stirring until the sugar fully dissolves. Bring to a gentle simmer for 1 minute, then remove from heat.  
2. Add the lemon and bergamot zests to the hot syrup, cover, and let steep 20–30 minutes to extract aromatics.  
3. Strain the syrup through a fine-mesh sieve into a bowl, pressing the zest to release juices, then discard solids. Cool the syrup to room temperature, then refrigerate until thoroughly chilled (at least 1 hour).  
4. When syrup is cold, stir in the lemon juice, bergamot juice (or the measured bergamot essential oil), Cointreau or limoncello (if using), and the pinch of salt. Taste and adjust acidity or sweetness: add up to 1–2 tbsp (15–30 ml) more syrup or 1–2 tsp (5–10 ml) more lemon/bergamot juice as desired. Chill mixture again if it warmed.  
5. Churn the cold mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft‑sorbet consistency (typically 20–30 minutes).  
6. Transfer sorbet to a shallow airtight container, smooth the surface, and freeze 1–3 hours to firm up before serving.  
7. No-machine method: pour the chilled mixture into a shallow metal pan, freeze 30–45 minutes, then stir vigorously with a fork to break ice crystals; repeat every 30 minutes until smooth and fully frozen (about 3–4 cycles). Store in airtight container and scoop from slightly softened.
