Ingredients
- 1 pork tenderloin, approx. 1.5 lb (680 g) total, butterflied
- 2 sweet potatoes, approx. 8 oz (225 g) each, thinly sliced
- 10 oz (285 g) fresh green beans
- 2 apples, approx. 6 oz (170 g) each, thinly sliced
- 2 tbsp (30 ml) Dijon mustard
Instructions
1. Preheat oven to 375°F (190°C). Spread Dijon over the butterflied pork, layer with apple slices, roll and secure; arrange a bed of overlapping thin sweet potato slices on a roasting pan, place rolled pork on top and tuck green beans alongside, roast 30–40 minutes until pork is cooked through and sweet potatoes are tender.
2. Let pork rest 5–10 minutes, slice into rounds to reveal apple filling, and serve on the layered sweet potatoes with roasted green beans.
