Ingredients
- 2 pork tenderloins, approx. 1 lb (450 g) each
- 3 sweet potatoes, approx. 8 oz (225 g) each
- 10 oz (285 g) fresh green beans
- 2 apples, approx. 6 oz (170 g) each
- 3 tbsp (45 ml) Dijon mustard
Instructions
1. Preheat oven to 400°F (200°C). Place sweet potatoes whole or halved depending on size on a baking tray and roast 25–35 minutes until tender; meanwhile spread Dijon mustard over pork tenderloins and roast on a separate tray 18–25 minutes (or until internal temperature reaches desired doneness), adding apple slices around pork for the last 12–15 minutes to soften and lightly caramelize.
2. Remove pork to rest 5–10 minutes, finish sweet potatoes and roast apples; trim and blanch or briefly steam green beans until crisp-tender, slice pork and serve with roasted sweet potatoes, roasted apple slices, and remaining Dijon as glaze.
