Ingredients
- 1 lb (454 g) ground beef
- 2 tbsp (30 ml) vegetable oil
- 1 medium onion, diced (about 6 oz / 170 g)
- 2 cloves garlic, minced (about 0.2 oz / 6 g)
- 2 cups (480 ml) diced tomatoes (fresh or canned)
- 1 cup (240 ml) long-grain white rice, rinsed
- 2 cups (480 ml) beef broth or water
- 1 tsp (5 g) ground cumin
- 1 tsp (6 g) kosher salt
- 1/2 tsp (1 g) black pepper
- 1/4 cup (15 g) chopped cilantro (optional)
Instructions
1. Heat oil in a large skillet over medium-high heat; add ground beef and cook, breaking up, until browned, then add onion and garlic and cook 3–4 minutes until softened; stir in diced tomatoes, cumin, salt, and pepper and simmer 2 minutes.
2. Add rinsed rice and broth, bring to a boil, reduce heat to low, cover and simmer 18–20 minutes until rice is tender and liquid is absorbed; fluff with a fork and stir in cilantro before serving.
