Ingredients

- 4 Käsekrainer sausages, approx. 5 oz (140 g) each
- 4 crusty rolls or Kaiser rolls
- 2 tbsp (30 ml) butter (for toasting rolls)
- 2 tbsp (30 ml) yellow mustard or spicy brown mustard (to serve)
- 1 small onion, thinly sliced (about 1/2 cup / 75 g) (optional, for serving)
- 1 cup (240 ml) water (for gentle poaching, optional)
- 1 tbsp (15 ml) vegetable oil (for grilling or pan-frying)

Instructions

1. If using the poach-then-sear method (recommended to prevent bursting), place sausages in a skillet, add water to come about 1/3 up the sides, cover and simmer gently over low heat 8–10 minutes until warmed through and internal fat begins to render; remove lid and simmer off most of the water.
2. Add the vegetable oil to the same pan and brown the sausages over medium-high heat, turning, until deeply golden and the cheese inside begins to melt, about 3–4 minutes total.
3. Meanwhile, split rolls and butter cut sides; toast in a separate skillet or under a broiler until golden, about 1–2 minutes.
4. Place each sausage in a toasted roll, add a smear of mustard and sliced onion if using, and serve hot.
