1. Preheat oven to 325°F (163°C). 2. Pat the chuck roast dry with paper towels, then sear in a heavy, ovenproof skillet or roasting pan over medium-high heat, 3–4 minutes per side, until well browned. 3. Transfer the roast to a rack in a roasting pan or keep in the skillet, fat-side up, and place in the preheated oven. 4. Roast uncovered until the meat is fork-tender and an instant-read thermometer inserted into the thickest part registers about 200°F (93°C), about 2½–3 hours for a 3 lb (1.36 kg) roast; times vary with size and oven. 5. Remove the roast from the oven and let rest on a cutting board, tented loosely, for 15–20 minutes. 6. Slice against the grain into portions and serve.
