Ingredients

- 1 bone-in leg of lamb, approx. 4 lb (1.8 kg) total
- 3 tbsp (45 ml) olive oil
- 3 tbsp (12 g) fresh rosemary, chopped
- 2 tbsp (6 g) fresh thyme leaves
- 6 cloves garlic, thinly sliced
- 2 tsp (4 g) freshly ground black pepper
- 1 1/2 tsp (9 g) kosher salt
- 1 cup (240 ml) dry white wine or stock (optional, for roasting pan)

Instructions

1. Preheat oven to 375°F (190°C). Make small incisions all over the lamb and insert slices of garlic. Mix olive oil, rosemary, thyme, black pepper, and salt; rub all over the lamb.
2. Place lamb on a rack in a roasting pan. Roast for about 1 hour 30 minutes to 2 hours (20–25 minutes per pound) for medium-rare to medium, basting occasionally and adding wine or stock to the pan if desired. Let rest 15 minutes before slicing.
