1. Preheat oven to 375°F (190°C). Make small incisions all over the lamb and insert slices of garlic. Mix olive oil, rosemary, thyme, black pepper, and salt; rub all over the lamb. 2. Place lamb on a rack in a roasting pan. Roast for about 1 hour 30 minutes to 2 hours (20–25 minutes per pound) for medium-rare to medium, basting occasionally and adding wine or stock to the pan if desired. Let rest 15 minutes before slicing.
