Ingredients

- 1/2 tsp (2.5 g) baking soda (optional, helps reduce slime when boiling)

1. Clean and prep the nopales: using a sharp knife, remove spines and the outer edges, then rinse. Slice each paddle into strips and dice into 1/2-inch pieces.
2. Boil the nopales: bring a pot of water to a boil large enough to cover the nopales; add 1/2 tsp (2.5 g) baking soda if using and 3/4 tsp (4 g) salt. Add the diced nopales and boil until tender and the slime is reduced, about 8–12 minutes (test a piece for tender but slightly firm texture).
3. Drain and cool: drain the nopales in a colander and rinse under cold running water, rubbing gently to remove remaining slime. Spread on a plate or bowl and let cool to room temperature or chill briefly in the refrigerator. Pat lightly with paper towel to remove excess moisture.
4. Assemble the salad base: in a large bowl combine the cooled nopales, diced tomatoes, diced white onion, chopped cilantro, and chopped serrano if using.
5. Dress and season: add the lime juice, olive oil (if using), 1/4 tsp (1 g) black pepper, and oregano (if using). Toss gently to combine and adjust salt to taste.
6. Add queso fresco: fold in about two-thirds of the crumbled queso fresco so it mixes through the salad; reserve the remaining cheese to sprinkle on top for serving.
