- 1/2 tsp (2 g) freshly ground black pepper

- 1/4 cup (60 ml) distilled white vinegar
- 1/3 cup (67 g) granulated sugar
- 2 tbsp (30 ml) hot sauce (adjust to taste; Frank's or similar)

- 1 tbsp (8 g) cornstarch mixed with 2 tbsp (30 ml) cold water (slurry)
- 2 tbsp (8 g) chopped green onions (for garnish)
- 1 tsp (2 g) sesame seeds (optional, for garnish)

Regional Notes:
This is the District of Columbia style of mumbo-sauced wings: a bright, ketchup-forward sauce brightened with vinegar and sweetened with sugar, finished with hot sauce for heat. Unlike other regional wing sauces, D.C. mumbo is sweeter and tangier than buffalo or barbecue and is traditionally poured over or served alongside fried wings in the city.
1. Pat the wings dry with paper towels and place in a large bowl. Sprinkle 1 tsp kosher salt, 1/2 tsp black pepper, 1 tsp garlic powder, and 1 tsp smoked paprika over the wings; toss to coat evenly.
2. In a separate bowl, whisk together 1 cup all-purpose flour, 1/4 cup cornstarch, and 1 tsp baking powder. Dredge each seasoned wing in the flour mixture, shaking off excess, and set on a wire rack to rest 10–15 minutes so the coating adheres.
3. Meanwhile, make the mumbo sauce: in a small saucepan over medium heat combine 1 cup ketchup, 1/4 cup white vinegar, 1/3 cup granulated sugar, 2 tbsp hot sauce, and 1 tsp garlic powder. Whisk and bring to a gentle simmer for 2 minutes.
4. Whisk the cornstarch slurry and slowly stir it into the simmering sauce. Continue to cook, stirring, until the sauce thickens and becomes glossy, about 1–2 minutes. Remove from heat and keep warm; reserve about 1/4 cup (60 ml) if you want extra dipping sauce.
5. Heat the vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C). Fry the wings in batches so they do not crowd the pan, about 8–10 minutes per batch, until deep golden-brown and crispy and an instant-read thermometer inserted into the thickest part reads at least 165°F (74°C). Transfer wings to a wire rack set over a baking sheet to drain.
6. When all wings are fried, place them in a large clean bowl. Pour most of the warm mumbo sauce over the wings (reserve up to 1/4 cup / 60 ml for dipping), and toss gently to coat evenly. Taste and add a pinch of salt if needed.
7. Arrange wings on a platter, sprinkle with chopped green onions and sesame seeds if using, and serve immediately with reserved mumbo sauce for dipping.
