Ingredients

- 1/2 cup (75 g) red bell pepper, finely diced
- 1/4 cup (40 g) yellow onion, finely diced
- 2 garlic cloves, minced (about 6 g)
- 1 tbsp (3 g) fresh thyme leaves, chopped
- 2 tbsp (8 g) fresh parsley, chopped
- 1 large egg
- 3/4 cup (180 ml) whole milk
- 1/4 cup (60 ml) club soda (or light beer) for lift
- 1 tbsp (15 ml) Worcestershire sauce
- 1 tbsp (15 ml) fresh lime juice (about 1 lime)
- Vegetable oil for deep-frying, about 6 cups (1.4 L)
- Lime wedges, for serving

- 1 tbsp (15 ml) hot sauce
- 1 tbsp (15 ml) fresh lime juice

1. Rinse conch under cold water and pat dry. Place conch in a medium pot with enough water to cover, add a pinch of salt, 1/4 onion, and a bay leaf if available. Bring to a simmer and cook gently 20–30 minutes until the conch is tender when pierced. Drain and let cool, then chop the conch into small, bite-sized pieces if not already chopped.
2. In a large bowl whisk together the flour, cornmeal, baking powder, 1 tsp kosher salt, black pepper, and cayenne until evenly distributed.
3. In a separate bowl whisk the egg, milk, club soda, Worcestershire sauce, and lime juice. Stir in the chopped conch, scallions, red bell pepper, diced onion, garlic, thyme, parsley, and minced scotch bonnet (if using) until evenly combined.
4. Fold the wet mixture into the dry ingredients gently until just combined; the batter should be thick enough to hold its shape on a spoon but still drop easily. If too thick, add a tablespoon of milk; if too loose, add a tablespoon of flour.
5. Heat vegetable oil in a deep heavy-bottomed pot or Dutch oven to 350°F (175°C). Use enough oil to allow fritters to float and turn freely (about 2–3 inches / 5–7 cm deep).
6. Working in small batches, drop rounded tablespoonfuls (or use a small cookie scoop) of batter into the hot oil, spacing fritters so they do not touch. Fry 2 1/2–3 1/2 minutes per batch, turning once, until deep golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.
