- 1 tbsp (15 g) finely chopped dill pickle or 1 tbsp (10 g) capers, chopped
- 1 small garlic clove, minced (about 2.5 g)
- 1 tbsp (4 g) finely chopped fresh parsley
- 1/4 tsp (1 g) smoked paprika (optional)
- Freshly ground black pepper to taste

1. Slice the tomatoes into 1/2-inch (12 mm) thick rounds. Arrange in a single layer on a tray, sprinkle lightly with 1/2 tsp (3 g) kosher salt, and let sit 10 minutes to draw out excess moisture. Pat dry with paper towels.
2. Set up a three-station dredging line: (A) 1/4 cup (30 g) flour for initial dusting; (B) whisk together 2 large eggs (approx. 100 g), 1/2 cup (120 ml) buttermilk, and 1 tbsp (15 ml) hot sauce (if using); (C) mix 1 cup (120 g) cornmeal, 3/4 cup (90 g) flour, 1 tsp (5 g) Old Bay, 1/2 tsp (3 g) kosher salt, and 1/2 tsp (1 g) black pepper.
