Ingredients
- 12 oz (340 g) sharp cheddar cheese, shredded
- 4 oz (113 g) cream cheese, softened
- 3/4 cup (180 ml) cold amber ale or lager (use a Kentucky or similar American beer)
- 1 tbsp (15 g) unsalted butter, melted
- 2 garlic cloves, minced (approx. 8 g)
- 1 tbsp (15 ml) Worcestershire sauce
- 1 tsp (3 g) dry mustard
- 1 tbsp (15 g) prepared horseradish (see note: optional but traditional)
- 1/2 tsp (1 g) smoked paprika
- 1/4 tsp (0.5 g) cayenne pepper (adjust to taste)
- 1/2 tsp (3 g) kosher salt (adjust to taste)
- 1/4 tsp (0.5 g) freshly ground black pepper
- 1 tsp (5 ml) apple cider vinegar (or lemon juice)
- 2 tbsp (6 g) chopped chives or green onion tops, for garnish
- Crackers, pretzels, and/or vegetable sticks (for serving)

A tangy, spicy spread made from sharp cheddar, beer, garlic, and seasonings — a classic appetizer from central Kentucky. Serve chilled or at room temperature with crackers, pretzels, or raw vegetables for dipping.
Regional Notes:
This is the central Kentucky version of beer cheese: sharp Kentucky cheddar, a local amber or lager, and bright heat from horseradish and cayenne give it the trademark tang and bite that distinguish it from milder cheese spreads elsewhere. Unlike some generic beer cheeses, this version leans on prepared horseradish and Worcestershire for punch and is served as a thick, spreadable dip.
1. Bring beer, melted butter, minced garlic, Worcestershire sauce, dry mustard, smoked paprika, and cayenne to a gentle simmer in a small saucepan over medium heat. Simmer 1–2 minutes to meld flavors, then reduce heat to low.
2. Add the softened cream cheese to the warm beer mixture and whisk until the cream cheese is mostly melted and the mixture is smooth.
3. Stir in the shredded cheddar a handful at a time, stirring constantly over low heat until each addition melts and the mixture becomes a thick, homogenous paste. If the dip seems too thin, remove from heat and let sit; if too thick, stir in up to 2 tbsp (30 ml) more beer to reach desired consistency.
4. Stir in the prepared horseradish, apple cider vinegar, salt, and black pepper. Taste and adjust seasoning — add more cayenne or horseradish for extra heat.
5. For a smoother, creamier texture (optional), transfer the warm mixture to a food processor or blender and pulse several times until smooth; scrape into a serving bowl.
6. Let the beer cheese cool to room temperature, then refrigerate 1 hour to firm and let flavors meld. Bring back to room temperature for 15–20 minutes before serving, or serve chilled for a firmer spread.
7. Garnish with chopped chives or green onions and serve with crackers, pretzels, or vegetable sticks. Store leftovers covered in the refrigerator for up to 5 days; rewhisk with a splash of beer or milk to loosen before serving.
