1 lb (450 g) asparagus, trimmed 2 tbsp (30 ml) extra-virgin olive oil, divided 1/2 tsp kosher salt 1/4 tsp freshly ground black pepper 1/2 cup (15 g) flat-leaf parsley, finely chopped 1 small garlic clove, finely grated 1 tbsp lemon zest (from 1 large lemon) 1 tbsp fresh lemon juice 2 tbsp (30 ml) capers, rinsed and chopped 3 tbsp (24 g) toasted sliced almonds, roughly chopped Pinch red pepper flakes (optional)
1. Heat a large cast-iron skillet or grill pan over medium-high until very hot (2–3 minutes). 2. Toss asparagus with 1 tbsp olive oil, salt, and pepper. Add to the hot pan in a single layer and cook, turning occasionally, until lightly charred and tender-crisp, 5–7 minutes. Transfer to a platter. 3. In a bowl, combine parsley, garlic, lemon zest, lemon juice, capers, almonds, remaining 1 tbsp olive oil, and red pepper flakes (if using). Mix and season to taste with a pinch of salt and pepper. 4. Spoon the gremolata over the warm asparagus. Serve warm or at room temperature.
