This Nuevo Leon version relies on goat's milk (leche de cabra) as the caramel base, giving the Glorias a tangy, complex flavor distinct from cow-milk or condensed-milk candies found elsewhere in Mexico. Toasted local pecans add texture and a nutty regional character common to Northern Mexico.
1. Toast the pecans: heat a dry skillet over medium heat and toast the chopped pecans, stirring frequently, until fragrant and lightly browned, about 4–6 minutes. Transfer to a bowl and let cool.
2. Prepare the pan: lightly grease an 8x8-inch (20x20 cm) square pan with 1 tsp (5 ml) butter or oil and line with parchment paper, leaving an overhang for easy removal.
3. Combine milk and sugar: in a heavy-bottomed saucepan, combine 4 cups (960 ml) goat's milk and 2 cups (400 g) granulated sugar. Whisk briefly to dissolve most sugar.
4. Bring to a simmer: place the pan over medium heat and bring to a gentle simmer, stirring frequently to prevent milk from scalding. Skim any foam that rises with a spoon.
5. Add baking soda and reduce heat: once simmering, add 1/4 tsp (1 g) baking soda (it will foam slightly) and reduce heat to medium-low. Continue cooking, stirring very frequently and scraping the bottom to prevent sticking.
6. Cook to caramel consistency: simmer until the mixture darkens to a deep golden caramel color and thickly coats a spoon, about 45–70 minutes. If using a candy thermometer, aim for about 240°F (115°C) for a soft, chewy set. Stir often—toward the end the mixture will thicken and pull away from the pan.
7. Finish the caramel: remove from heat and stir in 2 tbsp (28 g) unsalted butter, 1 tsp (5 ml) vanilla extract, and 1/4 tsp (1.5 g) salt until smooth.
8. Fold in pecans: quickly fold in the toasted pecans (1 1/2 cups / 150 g) so they distribute evenly through the caramel.
9. Set in pan: pour the hot mixture into the prepared pan, smoothing the top with a spatula. Let cool at room temperature until firm, about 1–2 hours. For faster setting, refrigerate until firm but not overly chilled, about 45–60 minutes.
10. Cut and wrap: lift the set Glorias from the pan using the parchment overhang. Cut into 24 equal pieces with a sharp knife. Wrap each piece in small squares of wax or parchment paper, tucking ends tightly.
11. Store and serve: store wrapped Glorias in an airtight container at room temperature for up to 2 weeks, or refrigerate for longer storage. Serve as a sweet snack or small-plate appetizer.
