- 2 garlic cloves, minced (about 8 g)
- 1 roma tomato, seeded and diced (about 3 oz / 85 g)
- 1 jalapeno or serrano pepper, seeded and finely chopped (optional, adjust for heat)
- 2 tbsp (30 ml) fresh lime juice
- 2 tbsp (8 g) chopped fresh cilantro
- 1/2 tsp (2.5 g) ground cumin
- 3/4 tsp (4 g) kosher salt, plus more to taste
- 1/4 tsp (1 g) freshly ground black pepper
- 1/2 cup (60 g) all-purpose flour, for dredging
- 4 large eggs, separated (whites and yolks kept apart)
- 2 cups (480 ml) vegetable oil or other neutral frying oil
- 1/4 cup (60 ml) Mexican crema or sour cream, for serving
- 1 lime, cut into wedges, for serving
- Optional: chopped pico de gallo or salsa roja, for serving

1. Roast and peel the poblanos: char the poblano skins over a gas flame, under a broiler, or on a hot grill until evenly blackened and blistered. Place in a bowl and cover with plastic wrap or seal in a paper bag for 10 minutes to steam. Peel off the charred skin, then make a lengthwise slit down one side of each pepper and carefully remove seeds and membranes, keeping stems intact. Pat dry and set aside.
2. Prepare the seafood filling: in a medium skillet, heat 1 tbsp (15 ml) vegetable oil over medium heat. Add the chopped onion and cook until softened, about 3–4 minutes. Add minced garlic and chopped jalapeno (if using) and cook 30 seconds until fragrant.
3. Add tomato, cumin, salt, and pepper to the skillet and cook until tomatoes soften, about 2 minutes. Stir in the chopped cooked shrimp and crab meat just to heat through, 1–2 minutes (do not overcook). Remove from heat and stir in lime juice, chopped cilantro, and 3 oz (85 g) of the shredded cheese. Taste and adjust seasoning.
4. Stuff the peppers: spoon the seafood mixture into each prepared poblano, dividing evenly (about 1/4 of filling per pepper). Add remaining shredded cheese into each pepper for extra melt, and close the slit gently; secure with a toothpick if necessary.
5. Set up dredging station: place 1/2 cup (60 g) flour in a shallow plate. In a clean bowl, whip the 4 egg whites to soft peaks using a whisk or electric mixer. Lightly beat the 4 yolks and fold them gently into the whipped whites to make a fluffy batter.
6. Dredge and coat: lightly dust each stuffed pepper in flour, shaking off excess, then dip into the egg mixture to coat completely. Let any excess drip off.
7. Fry the peppers: heat 2 cups (480 ml) of vegetable oil in a deep skillet over medium heat until shimmering and about 350°F (175°C) if using a thermometer. Carefully add 1–2 peppers at a time (do not overcrowd) and fry until golden brown on both sides, about 3–4 minutes per side, turning gently with tongs. 8. Drain and finish: transfer fried chiles to a paper towel–lined plate to drain. Remove toothpicks. Let rest 1–2 minutes.
9. Serve: plate one chile relleno per person as an appetizer. Spoon a little Mexican crema over each, add a lime wedge, and optionally serve with pico de gallo or salsa roja on the side for dipping. Serve warm.
