- 1/4 tsp (1 g) crushed red pepper flakes (optional)
- 1 tbsp (15 g) unsalted butter
- Salt and pepper to taste

Cheddar grits:
- 1 cup (170 g) stone-ground grits
- 3 cups (720 ml) water
- 1 cup (240 ml) whole milk
- 1 tsp (6 g) kosher salt
- 2 tbsp (30 g) unsalted butter
- 1 cup (113 g) shredded sharp cheddar cheese
- 2 scallions (green onions), thinly sliced, for garnish

5. Brush a generous layer of peach BBQ sauce over each thigh. Transfer the skillet to the preheated oven and roast until an instant-read thermometer inserted into the thickest part reads 165°F (74°C), about 18–22 minutes. Baste with more sauce once or twice during roasting for a glazed finish.
6. While the chicken roasts, start the grits: in a medium saucepan bring 3 cups (720 ml) water + 1 cup (240 ml) whole milk and 1 tsp (6 g) kosher salt to a gentle boil. Slowly whisk in 1 cup (170 g) stone-ground grits. Reduce heat to low and simmer gently, stirring frequently, until thick and tender, 20–25 minutes (stone-ground grits vary—cook until creamy). Stir in 2 tbsp (30 g) butter and 1 cup (113 g) shredded sharp cheddar until melted and smooth. Keep warm.
7. Cook the green beans with bacon: in a medium skillet over medium heat, render the chopped bacon until crisp, about 5–6 minutes. Add trimmed green beans and 2–3 tbsp (30–45 ml) water, cover, and steam 4–6 minutes until beans are bright green and tender-crisp. Remove lid, add minced garlic and cook 30–60 seconds until fragrant.
