- 2 large carrots, about 10 oz (280 g), peeled and cut into 2-inch (5 cm) chunks
- 1 lb (450 g) Yukon Gold or russet potatoes, halved or quartered to bite-size
- 2 stalks celery, about 3 oz (85 g), sliced into 1-inch (2.5 cm) pieces
- 4 cloves garlic, minced (about 12 g)
- 4 sprigs fresh thyme
- 2 bay leaves
- 2 tbsp (8 g) fresh parsley, chopped (for garnish)
