Instructions

Short Description:
A Connecticut classic: ground beef patties steamed until juicy, topped with melting cheese and served on soft kaiser rolls with lettuce, tomato, and onion. Served with oven fries and dill pickle slices to make a complete main-course meal.

Regional Notes:
This is the Connecticut steamed cheeseburger style: patties are cooked by steam rather than grilling or frying, producing an especially moist, compact patty. It is traditionally served on a kaiser roll with melted American-style cheese and simple raw vegetable toppings, distinguishing it from grilled New England burgers.

1. Preheat oven to 425°F (220°C) for the fries. Toss the cut potatoes with 2 tbsp (30 ml) vegetable oil, 1 tsp (5 g) kosher salt, 1/2 tsp (1 g) smoked paprika, and 1/4 tsp (0.5 g) black pepper. Spread in a single layer on a rimmed baking sheet. Bake 25–30 minutes, turning once, until golden and crisp.
2. Meanwhile, divide the ground beef into four equal portions and form 4 patties about 4 inches (10 cm) wide and 1/2 inch (1.3 cm) thick. Press a slight depression in the center of each patty to keep it flat during steaming. Season both sides with salt, pepper, and onion powder; brush lightly with Worcestershire if using.
3. Prepare your steaming apparatus: use a large stockpot with a steamer insert or rack so a shallow perforated baking tray can sit above the water without touching it. If you have a metal steam box or a deep skillet fitted with a tight lid and a metal rack, that works too. Pour 1 cup (240 ml) water into the pot (adjust to your apparatus size—enough to create steady steam but not touch the tray).
4. Arrange patties in a single layer on the shallow perforated tray or steamer insert. Bring water to a steady simmer over medium-high heat, then reduce to medium so steam is vigorous but not violent. Cover tightly.
5. Steam the patties 7–9 minutes for medium (adjust 6–10 minutes depending on thickness and desired doneness). Check an internal temperature of 160°F (71°C) for well-done; remove earlier for medium. The steam will keep the patties very juicy.
6. When patties are nearly done, place one slice of American cheese on each and re-cover for 30–45 seconds to melt the cheese from the residual steam.
7. While cheese melts, split kaiser rolls and spread softened butter on cut sides. If desired, toast cut sides briefly under the broiler or in a skillet until just golden.
8. Assemble burgers: place steamed cheeseburger patty on the bottom half of a kaiser roll, add shredded lettuce, 1–2 tomato slices, a few rings of red onion, and a dill pickle spear on the side. Add ketchup or mustard if desired, then top with the roll crown.
9. Serve each steamed cheeseburger with a generous portion of oven fries and extra pickles or a simple green side salad to complete the meal.
