- 2 lb (900 g) lean ground beef
- 1 large egg, beaten
- 1/2 cup (60 g) plain dry breadcrumbs
- 1/4 cup (60 ml) cold water
- 1 small onion, finely grated or very finely chopped, about 1/2 cup (75 g)
- 1 tbsp (15 ml) Worcestershire sauce
- 1 tbsp (12 g) brown sugar
- 2 tsp (8 g) garlic powder
- 1 tsp (1.8 g) onion powder
- 2 tsp (2 g) dried oregano
- 1 1/2 tsp (9 g) fine salt
- 1 tsp (2 g) freshly ground black pepper
- 1 tbsp (15 ml) vegetable oil (for roasting pan)
- 1 can (14 oz / 398 g) sweetened condensed milk
- 3 tbsp (45 ml) white vinegar
- 1 tsp (3 g) garlic powder (for sauce)
- 4 large pita breads or flatbreads (6–8 inch / 15–20 cm)
- 2 medium tomatoes, diced, about 10 oz (280 g)
- 1 medium onion, thinly sliced, about 6 oz (170 g)
- 4 cups (120 g) shredded iceberg lettuce
- Optional: hot sauce or crushed red pepper, to taste

A Halifax-style donair of spiced roasted ground beef, thinly sliced and piled into warm pita with chopped tomatoes, sliced onion, shredded lettuce, and the characteristic sweet garlic sauce that defines Nova Scotia donairs.
Regional Notes:
This is the Nova Scotia (Halifax) variation: spiced beef formed into a loaf, roasted and thinly sliced, and served with a sweetened condensed milk–based garlic sauce rather than the yogurt- or tahini-based sauces found elsewhere. The combination of the spiced beef, diced tomato, raw onion, and the sweet garlic sauce is the hallmark of the regional donair.
1. Preheat the oven to 375°F (190°C). Lightly oil a loaf pan or line a baking sheet with foil and brush with the tablespoon of vegetable oil.
2. In a large bowl combine the ground beef, beaten egg, breadcrumbs, 1/4 cup (60 ml) cold water, grated onion, Worcestershire sauce, brown sugar, 2 tsp (8 g) garlic powder, onion powder, oregano, salt, and pepper. Mix until just combined; avoid overworking the meat.
3. Shape the mixture into a compact loaf about 8–9 inches (20–23 cm) long and place it in the prepared loaf pan or on the oiled baking sheet. Smooth the top so it roasts evenly.
4. Roast in the preheated oven until the internal temperature reaches 160°F (71°C), about 45–55 minutes depending on thickness. If the top browns too quickly, tent loosely with foil.
5. Remove the roast from the oven and let it rest 10–15 minutes. For authentic donair texture, slice the roast very thinly across the grain—slice as thin as possible to mimic the shaved-doner style.
6. Meanwhile, make the sweet garlic sauce: in a medium bowl whisk together the sweetened condensed milk (1 can / 14 oz / 398 g), 3 tbsp (45 ml) white vinegar, and 1 tsp (3 g) garlic powder until smooth and slightly thickened. Taste and adjust vinegar or garlic if desired. Refrigerate until ready to serve; the sauce will thicken as it chills.
7. Warm the pita breads briefly in a dry skillet or oven (about 1–2 minutes each) until pliable. To assemble each donair, open a pita or lay a flat pita on a plate.
8. Place a generous portion of the thinly sliced donair meat in the center of each pita (about 1/2 lb / 225 g cooked meat per serving), top with diced tomatoes, a handful of shredded lettuce, and several slices of raw onion.
9. Drizzle the sweet garlic sauce liberally over the filling (don’t be shy—this is essential to the Halifax style). Add optional hot sauce or crushed red pepper if desired.
10. Fold or roll the pita and serve immediately while meat is warm and the sauce is cold.
