- 3 tbsp (45 ml) fresh lime juice (about 2 limes)
- 1 large avocado, diced (approx. 7 oz / 200 g)
- 2 medium tomatoes, seeded and diced (about 10 oz / 280 g)
- 1/2 cup (packed) chopped cilantro (about 8 g)
- 1 small jalapeño, seeded and finely chopped (optional)
- 1/4 tsp (1.5 g) kosher salt, plus more to taste
- 1/4 tsp (0.5 g) freshly ground black pepper, plus more to taste
- 1 bay leaf (for cooking the beef)
- 2 cups (480 ml) water or low-sodium beef broth (for cooking beef)

1. Prepare the beef: place the chuck roast in a medium pot with 2 cups (480 ml) water or beef broth, 1/2 of the onion (quartered), garlic cloves, bay leaf, and 1/4 tsp (1.5 g) salt. Bring to a simmer, reduce heat, cover, and cook gently until very tender, about 1.5–2 hours (or pressure cook 45 minutes). Skim any foam that forms.
2. Shred and season beef: remove beef from the pot and discard bay leaf and cooking onion. Shred the meat with two forks while warm. If needed, reserve 2–3 tbsp (30–45 ml) cooking liquid to moisten. Taste and adjust with a pinch more salt and 1/8 tsp (0.25 g) black pepper.
