Ingredients

- 4 tbsp (56 g) unsalted butter, cut into pieces

- 1/2 cup (120 ml) dry white wine
- 1 tbsp (15 ml) fresh lemon juice
- 2 tbsp (8 g) chopped fresh flat-leaf parsley
- 1/2 tsp (2.5 g) fine sea salt, plus more to taste
- 1/4 tsp (0.5 g) freshly ground black pepper
- 1/8 tsp (0.5 g) crushed red pepper flakes (optional)
- Lemon wedges, for serving
- 1 small baguette or crusty bread, sliced, approx. 8 oz (225 g), for serving

1. Rinse the mussels under cold water, discard any with cracked shells or that do not close when tapped, and remove beards by pulling toward the hinge. Keep refrigerated until ready to cook.
2. In a large, heavy-bottomed pot or Dutch oven with a tight-fitting lid, heat the olive oil over medium heat. Add the shallot and cook until softened and translucent, about 2 minutes.
3. Add the garlic and cook, stirring, until fragrant but not browned, about 30 seconds.
4. Pour in the white wine and bring to a brisk simmer, scraping up any browned bits. Let the wine reduce slightly, about 1–2 minutes.

6. Using a slotted spoon, transfer the opened mussels to a large warmed bowl, leaving the cooking liquid in the pot.
7. Reduce the cooking liquid over medium-high heat for 1–2 minutes if it seems very thin. Remove the pot from the heat and whisk in the butter pieces a few at a time to create a glossy sauce. Stir in the lemon juice, chopped parsley, salt, pepper, and red pepper flakes if using.
