Ingredients

- 1 small habanero chile, seeds removed and finely minced (or 1 jalapeno for milder heat)
- 1/2 medium cucumber, peeled, seeded and diced, about 1 cup (150 g) — optional but common in the region
- 2 ripe avocados, diced for garnish
- 1 1/2 tsp (8 g) sea salt, adjust to taste
- 1/4 tsp (1 g) freshly ground black pepper
- 1 tbsp (15 ml) neutral oil or extra-virgin olive oil (optional, for sheen)
- 8–12 tostadas or 2 cups (approx. 60 g) tortilla chips, for serving

This Quintana Roo version uses fresh Caribbean conch (caracol) instead of fish or shrimp, reflecting the local abundance of shellfish. The conch is thinly sliced and acid‑marinated in lime, then combined with regional ingredients—cilantro, ripe tomatoes, white onion, and often a small amount of habanero—for a clean, tangy, and slightly spicy ceviche distinct from Pacific or inland preparations.

1. Rinse the conch under cold water and pat dry. If needed to tenderize, lightly pound the slices between sheets of plastic wrap until slightly flattened, then slice thinly or dice.
2. Place the conch in a glass or nonreactive bowl and pour the fresh lime juice over it, ensuring the meat is fully submerged. Stir in 1 tsp (5 g) of the salt. Cover and refrigerate to marinate 2–3 hours, stirring once or twice; the conch should turn opaque and feel firm but tender.
3. While the conch marinates, combine the diced tomatoes, chopped white onion, cilantro, minced habanero, cucumber (if using), remaining 1/2 tsp (3 g) salt, and black pepper in a separate bowl. Let sit 15 minutes to marry flavors.
