- 1 tsp (4 g) brown sugar
- 1 1/2 tsp (8 g) kosher salt
- 1/2 tsp (1 g) freshly ground black pepper
- 8 lefse (store-bought or homemade), about 6–8 in (15–20 cm) each
- 2 tbsp (30 g) unsalted butter, for warming lefse

Pickled red cabbage
- 2 cups (150 g) shredded red cabbage
- 1/2 cup (120 ml) apple cider vinegar
- 1/2 cup (120 ml) water
- 2 tbsp (30 g) granulated sugar
- 1 tsp (6 g) kosher salt

Dill-lime crema
- 1/2 cup (120 g) sour cream
- 1/4 cup (60 g) mayonnaise
- 1 tbsp (15 ml) fresh lime juice
- 1 tbsp (4 g) chopped fresh dill
- 1 tsp (5 ml) honey or to taste
- Salt and pepper to taste

Toppings and garnish
- 4 oz (115 g) queso fresco or mild feta, crumbled
- 4 radishes, thinly sliced (about 4 oz / 115 g)
- 1/4 cup (10 g) chopped fresh cilantro (optional)
- Lime wedges for serving

1. Preheat oven to 300°F (150°C). Pat the pork shoulder dry and rub with salt, pepper, cumin, smoked paprika, mustard powder, brown sugar, and crushed juniper berries.
2. Heat the neutral oil in a heavy Dutch oven or ovenproof pot over medium-high heat. Sear the pork on all sides until well browned, about 3–4 minutes per side. Remove pork and set aside.
