- 1 tbsp (15 ml) whole-grain mustard
- 1 tbsp (15 ml) Worcestershire sauce
- 1 tbsp (14 g) cold unsalted butter for finishing pan sauce
- 2 lb (900 g) Yukon Gold potatoes, peeled and cut into 1-1.5 in (2.5–4 cm) chunks

1. Remove steaks from the refrigerator 30–45 minutes before cooking to come toward room temperature; pat dry with paper towels and season both sides liberally with 2 tsp (10 g) kosher salt and 1 tsp (2 g) black pepper.
2. Start the potatoes: place potato chunks in a large pot and cover with cold water by 1 in (2.5 cm). Add 1 tsp (5 g) salt, bring to a boil over high heat, then reduce to a simmer and cook until fork-tender, about 15–18 minutes.
3. While potatoes cook, heat a large cast-iron or heavy skillet over high heat until very hot (2–3 minutes). Add 2 tbsp (30 ml) vegetable oil and swirl to coat.
4. Sear the steaks: place steaks in the hot skillet without crowding. Sear 3–4 minutes on the first side until deeply browned. Flip and add 2 tbsp (28 g) unsalted butter, 2 smashed garlic cloves, rosemary, and thyme to the pan. Tilt the pan and baste steaks with the melted butter and aromatics for an additional 3–4 minutes for medium-rare (internal temp 125–130°F / 52–54°C), or adjust time for desired doneness.
5. Transfer steaks to a warm plate, tent loosely with foil, and rest for 8–10 minutes while you finish sides and make the sauce.

8. Cook the corn: in a medium skillet over medium heat, melt 2 tbsp (30 g) butter. Add 3 cups (450 g) fresh corn kernels and sauté 4–5 minutes until kernels are bright and just starting to brown. Stir in 2 tbsp (8 g) chopped parsley and 1/4 tsp (1 g) smoked paprika if using; season with salt and pepper to taste. Keep warm.
9. Reheat pan briefly if the steaks have cooled a little: return steaks to the skillet for 30–60 seconds per side just to warm through, or place under a 250°F (120°C) oven for 5 minutes.
