Ingredients
- 8 oz (225 g) cream cheese, softened

- 1 tbsp (15 ml) fresh lemon juice
- 3/4 tsp (4 g) kosher salt, plus more to taste
- 1/2 tsp (1 g) freshly ground black pepper
- 2 tbsp (6 g) chopped fresh chives or extra ramp greens for garnish (optional)
- 1/4 tsp (0.5 g) smoked paprika or sweet paprika for garnish (optional)

1. Clean the ramps: trim roots and any damaged leaves, rinse well to remove grit, then pat dry. Roughly chop bulbs and leaves together.
2. Heat the butter (or oil) in a small skillet over medium heat. Add the chopped ramps and sauté 2–3 minutes until bulbs are softened and greens are wilted; remove from heat and let cool to room temperature.
3. In a medium bowl, beat the softened cream cheese until smooth. Stir in the sour cream and mayonnaise (if using) until fully combined and creamy.
4. Add the minced garlic, lemon juice, salt, and pepper to the cream mixture and mix well.
5. Fold the cooled sautéed ramps into the cream mixture until evenly distributed. Taste and adjust seasoning with additional salt or lemon juice if needed.
