Ingredients

- 2 large yellow onions, quartered, approx. 1 lb (450 g)
- 4 cloves garlic, smashed, approx. 12 g
- 6 medium carrots, peeled and cut into 2-inch (5 cm) pieces, approx. 1 lb (450 g)
- 1.5 lb (680 g) Yukon Gold or red potatoes, halved or quartered if large
- 2 stalks celery, trimmed and cut into 1-inch (2.5 cm) pieces, approx. 100 g
- 1 medium tart apple (e.g., McIntosh or Cortland), cored and sliced, approx. 6 oz (170 g)
- 2 cups (480 ml) apple cider (preferably local Michigan cider, unfiltered if available)
- 2 cups (480 ml) low-sodium beef stock
- 2 tbsp (30 ml) Worcestershire sauce
- 2 tbsp (30 g) tomato paste
- 3 sprigs fresh thyme (or 1 tsp / 1 g dried thyme)
- 2 bay leaves
- 1 tsp (4 g) brown sugar (optional, to balance cider acidity)
- 2 tbsp (16 g) cornstarch
- 3 tbsp (45 ml) cold water
- Fresh parsley, chopped, for garnish (optional)

This Michigan variation uses apple cider in the braising liquid and finishing gravy, giving the dish a subtle sweet-tart brightness that reflects Michigan's apple-growing tradition. Unlike some pot roasts that rely on wine or beer, this version leans on cider and a touch of Worcestershire for depth.

1. Preheat the oven to 325°F (163°C). Pat the beef roast dry with paper towels and season all over with 1 1/2 tsp kosher salt and 1 tsp black pepper. Lightly dredge the roast in 2 tbsp flour, shaking off excess.
2. Heat 2 tbsp vegetable oil in a large Dutch oven over medium-high heat until shimmering. Sear the roast 3–4 minutes per side, until a deep brown crust forms. Transfer the roast to a plate.
3. Reduce heat to medium and add 2 tbsp butter to the pot. Add the quartered onions and cook, stirring, until they begin to brown, about 5 minutes. Add the smashed garlic and cook 30 seconds until fragrant.
4. Stir in 2 tbsp tomato paste and cook 1 minute. Pour in 1 cup (240 ml) apple cider to deglaze, scraping up browned bits from the bottom of the pot. Add the remaining 1 cup (240 ml) apple cider and 2 cups (480 ml) beef stock, then stir in 2 tbsp Worcestershire sauce, 1 tsp brown sugar (if using), thyme sprigs, and 2 bay leaves.
5. Return the seared roast to the pot, nestling it into the braising liquid. Bring the liquid to a gentle simmer on the stovetop, then cover the Dutch oven and transfer to the preheated oven. Braise until the roast is fork-tender, about 2 1/2 to 3 hours.
6. After the roast has braised for about 1 1/2 to 2 hours, add the carrots, celery, apple slices, and potatoes around the roast, pushing them partly into the liquid. Recover and continue braising until vegetables are tender and meat is very tender, another 1 to 1 1/2 hours.
7. When the roast and vegetables are done, carefully transfer the roast to a cutting board and tent with foil. Remove vegetables to a serving dish and cover to keep warm.
8. Strain the braising liquid into a large measuring cup or bowl, discarding bay leaves and thyme stems and squeezing out as much liquid as possible from solids. Skim off excess fat from the surface, or refrigerate briefly to solidify fat for easier removal.
9. To make the gravy, whisk 2 tbsp cornstarch with 3 tbsp cold water to make a slurry. Return the strained liquid to the clean Dutch oven or a saucepan over medium heat and bring to a simmer. Whisk in the cornstarch slurry and simmer until the gravy thickens, 2–3 minutes. Taste and adjust seasoning with salt and pepper as needed.
10. Slice the roast across the grain into 1/2-inch (1.25 cm) thick slices. Serve the sliced beef with the braised carrots, potatoes, onions, and apple slices, spooning the warm apple-cider gravy over the top. Garnish with chopped parsley if desired.
