Ingredients

- 1/2 cup (120 ml) mayonnaise
- 1 1/2 tbsp (22 ml) Dijon mustard
- 1 tbsp (15 ml) sweet dill pickle relish
- 1 tsp (5 ml) white vinegar or lemon juice
- 1 tsp (2.3 g) Old Bay seasoning, plus more for dusting
- 1/4 tsp (1.5 g) kosher salt
- 1/8 tsp (0.5 g) freshly ground black pepper
- 1/4 tsp (1 g) smoked or sweet paprika, plus more for garnish
- 1 tbsp (6 g) finely chopped chives or green onion tops, plus extra for garnish
- Optional: 2 slices cooked bacon, crumbled, approx. 1 oz (30 g)

1. Place eggs in a single layer in a saucepan and cover with cold water by about 1 inch (2.5 cm). Bring to a gentle boil over medium heat. Once boiling, remove the pan from heat, cover, and let stand 10 minutes. Transfer eggs to an ice bath to cool completely, about 5 minutes.
2. Peel the cooled eggs and slice each lengthwise. Carefully remove yolks and place yolks in a medium bowl; arrange egg whites on a serving platter.
3. Mash yolks with a fork until crumbly. Add mayonnaise, Dijon mustard, pickle relish, vinegar or lemon juice, Old Bay, salt, pepper, and paprika. Stir until smooth and creamy; taste and adjust salt, Old Bay, or vinegar as needed. Fold in chopped chives and crumbled bacon if using.
4. Transfer yolk mixture to a small piping bag fitted with a star tip (or use a resealable plastic bag with a corner snipped, or a spoon). Pipe or spoon the filling into the egg white hollows, dividing evenly.
5. Lightly dust the filled eggs with a pinch more Old Bay and a sprinkle of paprika. Garnish with additional chopped chives.
6. Chill the deviled eggs at least 30 minutes before serving to let flavors meld. Serve cold.
